Cactus S'mores Cake


 This cake gets me SO EXCITED! I created this cake based on my best friend, Emily.

Let me tell you a bit about my best friend. First off, If you ' call her Bitchzinski, you're wrong. That nickname has been her nickname since day 3 of meeting her. This girl literally fell into my life. She is in my sorority and we met from her befriending my little. She was trying to get a little at the same time as my littles, and she watched me navigate helping one little run an entire sorority retreat, while also trying to help my other little decide on who she wanted as her little(s). When all three of these girls got littles, Bitchzinski started coming over to craft with us...

Next thing I knew I was spending about 80% of my time in my last years of college with this random, cactus obsessed, ADHD ridden person.

We now live about 6 hours apart from each other and our main form of communication is Snapchat. But enough about us, let's get to the cake!

So my FAVORITE dessert flavor is s'mores. I love gooey marshmallows and chocolate. Originally I was going to make the cake a desert using graham cracker dust with my green cacti piped with a star wilton tip and white jimmies. Cake complications put a huge damper on that idea.
I ran into a ton  of issues constructing this cake.
I was taught to stack cake layers while frozen, and that was all fine and dandy at first. I have chocolate cake layers with a layer of graham crackers all smashed up, and marshmallow fluff buttercream making three beautiful layers.....

until the layers started to get warm... and that marshmallow buttercream I love so much started to expand because it too was getting warm.
← If you look at this picture, you can see the buttercream had busted through the side of the cake. This cake also leans pretty bad.
 I also did not do a crumb coat. Mistake 2. C'mon Jenna, that's cake 101 what are you thinking?

But what went well with this cake?

  1.  The flavors were AMAZING (That's all that really matters right?)
  2. I got to experiment with my own sprinkle mix! 
  3. I successfully made a buttercream rope top and achieved a vibrant color scheme that I am still obsessed with to this day!

All problems aside, This cake goes down in history as my absolute FAVORITE cake. It reminded me of my best friend in this whole word, I got to make something with my favorite dessert flavor, and it turned out beautiful even with its issues.


I made the recipe up for this cake as i was making it, which you can find below! Enjoy!

Recipe

Chocolate Cake
Preheat oven to 325 degrees (F)
Ingredients:
Duncan Hines Chocolate cake mix
Instant Chocolate pudding mix
1/3 cup vegetable oil
1 cup boiling water
2/3 cup sour cream
4 eggs

mix all ingredients with a whisk until combined well. 
spray 6" baking round with pam and place parchment circle at bottom.
Fill batter 1/3 the way up your cake round
(I also add Wilton's bake even strips to help the cake rise and bake evenly)

bake for 28-35 minutes or until baked all the way through.

Filling
1 cup marshmallow fluff
1 box of graham crackers (crumbled)
Marshmallow buttercream (listed below)

in between each cake layer, spread 1/3 of the marshmallow fluff onto the cake, as well as a scoop or two of marshmallow buttercream (depending on how much marshmallow flavor you want between your layers. You will also be using marshmallow buttercream on the outside of the cake). then sprinkle a good amount of graham cracker dust, and repeat all steps between the cake layers.

Marshmallow Buttercream

4-6 cups sifted powdered sugar
2 sticks of butter (room temperature)
1/4 cup heavy cream
1/2 cup marshmallow fluff
1 tbsp vanilla

In a stand mixer, fluff the butter on medium setting for a few minutes. The butter will lighten in color and get slightly fluffy. add in the vanilla and heavy cream. Mix on low speed until combined and creamy. Alternate on cup of powdered sugar and marshmallow fluff on low speed until you have reached your desired consistency and taste. You can also add more marshmallow fluff if the buttercream does not have enough marshmallow flavor!
